Blog dedication with a side of cake!
In order to celebrate the commencement of my blog, I thought we should christen my new venture with cake. In fact, not just any old ordinary cake, but a cake that has a very special meaning in my life. When I was a young girl, my grandmother would make a Hummingbird cake for me on my birthday. I always looked forward to enjoying a piece of that delicious goodness, with the tropical flavors of pineapple and banana mixing in my mouth.
This cake is not only one of my favorites, but the person who lovingly baked it is also dearly beloved. My grandmother is a joy to be around, a free spirit, and possesses great inner strength. She is a two time breast cancer survivor and throughout the hardships of life she has managed to remain a light in this world.
At 89 years old, her zeal for life and her philosophy of looking at the glass half full has been an inspiration to me. I have been blessed to not only call her grandma but also my friend. She has been my greatest cheerleader, my confidant, and someone I admire. Whenever I am in need of valuable wisdom, I know all I have to do is pick up the phone and call her. Having been married 59 years, and a mother of 5, she gives great advice!
I wish you all could experience her loveliness, but since that is not possible, I leave you with a recipe that truly embodies who she is-sweet as her spirit, comforting as her voice, tender as her love, and as bright as her smile.
My favorite Hummingbird Cake recipe is from the book, The Cake Mix Doctor by Anne Byrn. My grandmother gave me her cookbook before I went to college and it couldn’t be easier. This cake is perfect for summer time, with its refreshing flavors and white cream cheese frosting, it’s sure to have your heart humming with happiness.
